For the agave nerds
- Made by: La Primavera distillery, founded by Don Julio González in 1942 in the highlands of Jalisco.
- Agave: 100% Blue Weber agave, harvested at 5 to 7 years old.
- Cooking and extraction: Piñas steamed in traditional masonry ovens for about 48 hours, then milled to release the sweet juice.
- Fermentation: A house yeast strain, for about 26 hours.
- Still: Double distilled in stainless steel pot stills with copper.
- Ageing: At least two and a half years in ex-bourbon American white oak casks, made in small batches. Named for the year Don Julio González started making tequila.
Why it tastes like this: Steaming the agave slowly in masonry ovens keeps it sweet and clean. The longer a bottle sits in ex-bourbon oak, the more vanilla, caramel and toasted wood it picks up.
