Mezcal

Mezcal is agave spirit with a smoky side. Like tequila, it's made from agave, but mezcal can use many kinds of agave and most of it comes from Oaxaca in southern Mexico. In traditional mezcal, the agave hearts are roasted in pits in the ground, and that's where the smoke comes from.
