Screenprint-style Amaretto Sour with lemon and a shaker on the Liquor Club counter

Amaretto Sour Recipe: Easy Disaronno Sour

An Amaretto Sour balances sweet, almond-like liqueur with fresh lemon and a little sugar syrup. This simple Disaronno Sour uses three ingredients plus ice. Egg white is optional, so you can make the version below without it.

Amaretto Sour recipe with Disaronno

Makes: 1 drink · Preparation: about 5 minutes

Method

  1. Add 50ml Disaronno Originale, 25ml freshly squeezed lemon juice and 5ml sugar syrup to a cocktail shaker.
  2. Fill the shaker with ice, close it securely and shake until the outside feels cold.
  3. Strain into a short glass over fresh ice.
  4. Garnish with a lemon slice and serve.

The liquid measures come from the official Disaronno Sour recipe, which lists egg white as optional. This method makes the egg-free version shown in our illustration.

Quantities for 1, 2 or 4 drinks

Ingredient 1 drink 2 drinks 4 drinks
Disaronno Originale 50ml 100ml 200ml
Fresh lemon juice 25ml 50ml 100ml
Sugar syrup 5ml 10ml 20ml

Use fresh ice and a lemon slice for each serving. Shake in small batches that fit your shaker comfortably; do not overfill it.

Get the sweetness and acidity right

Start with the measured recipe before adjusting. If it tastes too sweet, add a small amount of lemon juice. If it is too sharp, add a little syrup. Make one change at a time: extra lemon changes acidity, while extra syrup changes sweetness.

Fresh lemons vary in sharpness, and syrups vary in concentration. The brand specifies sugar syrup without stating a concentration. For a homemade starting point, dissolve equal weights of white sugar and water, then cool before use. Measure the finished syrup in millilitres. Brown sugar brings a different flavour, so keep it as a deliberate variation.

Do I need egg white?

No. It adds foam and a softer texture, but the drink works without it. If you want that finish, use a pasteurised egg-white product suitable for cocktails and follow its serving instructions. The egg-free recipe above is the simplest starting point.

Why shake with ice?

Shaking combines the citrus and syrup while chilling and diluting the drink. Straining onto fresh ice gives you a colder serving without carrying all the small broken ice pieces into the glass.

Amaretto Sour questions

Is a Disaronno Sour the same as an Amaretto Sour?

A Disaronno Sour is an amaretto-style sour made specifically with Disaronno Originale. Other amaretto liqueurs can change the sweetness and flavour, so the same measures may need adjusting.

Can I use Disaronno Velvet?

Use Originale for this recipe. Velvet is a cream liqueur and is not a like-for-like replacement.

Does an Amaretto Sour need bourbon?

Not this version. Some variations add bourbon, but the official Disaronno Sour uses Disaronno, lemon and syrup, with optional egg white.

How many servings are in a 70cl bottle?

At 50ml per drink, 700ml makes 14 measured servings before spills. You will need 350ml lemon juice and 70ml syrup for that total.

Choose your bottle

Use Disaronno Originale Amaretto, 70cl. For the sugar syrup, follow the simple equal-weights method above and let it cool before mixing.

For a drink built directly in the glass, try our Aperol Spritz recipe. If you want to experiment with flavoured syrup another time, our homemade cinnamon syrup guide explains a separate variation.
