Single-estate, additive-free blanco. Each batch comes from one named agave field.

We stock Ocho because it treats agave like wine: every bottle names the field and year the agave came from. It's bright, peppery and clean, and it's additive-free. A brilliant tequila to learn on. Compare two different years side by side and you'll taste how the field and the weather change the agave, just like wine.

Tastes like: fresh agave, lime peel, white pepper and herbs.

How to drink it:

  • Neat, or with a splash of water
  • Tommy's margarita: 50ml Ocho Blanco, 25ml fresh lime juice and 15ml agave syrup, shaken with ice
  • Paloma: 50ml Ocho Blanco over ice, topped with grapefruit soda, a squeeze of lime and a pinch of salt

If you like this, try: Tequila Ocho Reposado, 50cl (the reposado) · Fortaleza Reposado Tequila, 70cl (another additive-free tequila)

For the agave nerds
  • Agave: Agave harvested only when fully ripe, at 7 to 10 years old, from fields in the highlands of Jalisco, many near Arandas.
  • Cooking: Slow-cooked in brick ovens for 48 hours, then left to rest in the oven for about 24 hours more.
  • Extraction: A roller mill shreds the cooked agave and presses out the juice.
  • Fermentation: About 100 hours in wood vats, using natural airborne yeast.
  • Still: Double pot-distilled. The second run is in a very small, fully copper pot still, modelled on Carlos Camarena's grandfather's original stills, run slowly at low temperature.
  • Ageing: Unaged.

Why it tastes like this: Slow cooking, a long wild fermentation and a tiny copper still are why Ocho tastes so much of ripe agave. It's tequila made the long way.
