Single-estate reposado, rested for eight weeks and eight days. Agave first, oak second.
We stock Ocho Reposado because it shows how a short rest in oak should work: the agave still leads. It's smoother than the blanco but never sweet or vanilla-heavy. It's a great choice for whisky drinkers curious about tequila, and it makes a beautiful, light Old Fashioned.
Tastes like: cooked agave, light vanilla, citrus and gentle spice.
How to drink it:
- Neat, in a small tasting glass
- On the rocks: 50ml Ocho Reposado over one large ice cube with a twist of orange peel
- Tommy's margarita: 50ml Ocho Reposado, 25ml fresh lime juice and 15ml agave syrup, shaken with ice

For the agave nerds
- Agave: Agave harvested only when fully ripe, at 7 to 10 years old, from fields in the highlands of Jalisco, many near Arandas.
- Cooking: Slow-cooked in brick ovens for 48 hours, then left to rest in the oven for about 24 hours more.
- Extraction: A roller mill shreds the cooked agave and presses out the juice.
- Fermentation: About 100 hours in wood vats, using natural airborne yeast.
- Still: Double pot-distilled. The second run is in a very small, fully copper pot still, modelled on Carlos Camarena's grandfather's original stills, run slowly at low temperature.
- Ageing: 200-litre American oak barrels that once held American whiskey and have had several tequila fills, so the oak stays gentle.
Why it tastes like this: Slow cooking, a long wild fermentation and a tiny copper still are why Ocho tastes so much of ripe agave. It's tequila made the long way.
