We stock Zacapa XO for the moments that need a big bottle: a milestone birthday, a thank-you, a celebration. It's richer and drier than the 23, and the cognac cask shows. Cognac drinkers love this one. It comes in a smart presentation bottle, so it needs no gift wrap, and it's a great way to show a cognac lover what rum can do.
Tastes like: dark chocolate, dried fruit, vanilla, sweet spice and toasted oak.
How to drink it:
- Neat: pour 35ml of Zacapa XO into a tumbler, let it sit for a minute, then add a drop of water if you like
- With a few drops of water to open up the dried fruit and spice
- After dinner, alongside dark chocolate or a good dessert

For the rum nerds
- Made by: Ron Zacapa, Guatemala.
- Ageing: Aged 7,545ft (about 2,300m) above sea level, to develop slowly, using the Sistema Solera, where older and younger rums are blended as they age.
- People: Master Blender Lorena Vásquez, one of the few female master blenders in spirits, with more than 35 years in the job.
- This blend: Rums aged between 10 and 25 years in ex-American whiskey, sherry and Pedro Ximénez casks, then finished in French oak casks that previously held cognac.
Why it tastes like this: Older rums and a cognac-cask finish make this drier, deeper and more like a brandy than Zacapa 23.
