For the cognac nerds
- Made by: Rémy Martin, Cognac. A Fine Champagne cognac, made only from Grande Champagne and Petite Champagne, the two crus at the heart of Cognac, on chalky soils.
- Still: Distilled on the lees, then selected blind.
- Ageing: In large-grain French oak barrels toasted to a "medium plus" level.
- This blend: Hundreds of eaux-de-vie, each aged at least 10 years in French oak.
Why it tastes like this: At least ten years in oak turns Fine Champagne into something rich, with ripe fig, candied orange and spice.
