Make it a rum cocktail
The syrups and bitters we use behind the bar. Add one to your order.
Eight-year-old Jamaican rum. The sweet spot between mixing and sipping.
We stock the 8 because it's our favourite value sipper from Jamaica. It has the fruit and funk Jamaica is known for, but eight years of oak round it out. Great neat, brilliant in a Mai Tai. If you want one bottle that does both sipping and cocktails, this is it.
Tastes like: orange peel, cocoa, toasted oak, molasses and warm spice.
How to drink it:
- Neat: pour 35ml of Appleton 8 into a tumbler, let it sit for a minute, then add a drop of water if you like
- Mai Tai: 50ml Appleton 8, 25ml lime juice, 15ml orange liqueur and 15ml orgeat, shaken with ice
- Old Fashioned: 50ml Appleton 8, a teaspoon of sugar syrup and two dashes of Angostura bitters, stirred over ice with a twist of orange

For the rum nerds
- Made by: Appleton Estate, a single estate in Jamaica's Nassau Valley, St Elizabeth. Distilling there is documented back to 1749.
- Made from: Molasses from sugar cane grown on the estate, which grows more than ten cane varieties.
- Water: Spring water naturally filtered through limestone.
- Fermentation: Molasses, spring water and Appleton's own cultured yeast.
- Still: A blend of rum from 100% copper Forsyth pot stills and column stills.
- Age: Every drop at least 8 years old, aged in Jamaica's tropical climate, where Appleton says rum ages roughly three times faster than in cooler climates.
- Bottling: 43% ABV, with no added flavours.
- People: Master Blender Dr Joy Spence chooses and blends the aged rums.
Why it tastes like this: Pot still rum gives Jamaica its heavy, fruity character, and column rum lightens the blend. Rum ages fast in tropical heat, so every extra year in the Nassau Valley adds more oak, dried fruit and spice.
