Make it a rum cocktail
The syrups and bitters we use behind the bar. Add one to your order.
A rare, 21-year-old Jamaican rum. A once-in-a-while bottle for a big occasion.
We stock the 21 because it's the top of the Appleton tree and one of the finest aged rums you can buy. Deep, dry and long. We hold only a couple of bottles at a time. It's the bottle to mark a big birthday, a wedding or a retirement, and it rewards slow sipping.
Tastes like: cocoa, coffee, orange peel, vanilla, nutmeg and old oak.
How to drink it:
- Neat: pour 35ml of Appleton 21 into a tumbler, let it sit for a minute, then add a drop of water if you like
- With a few drops of water
- After dinner, with dark chocolate or a cigar

For the rum nerds
- Made by: Appleton Estate, a single estate in Jamaica's Nassau Valley, St Elizabeth. Distilling there is documented back to 1749.
- Made from: Molasses from sugar cane grown on the estate, which grows more than ten cane varieties.
- Water: Spring water naturally filtered through limestone.
- Fermentation: Molasses, spring water and Appleton's own cultured yeast.
- Still: A blend of rum from 100% copper Forsyth pot stills and column stills.
- Age: Hand-selected pot and column still rums, at least 21 years old, aged in Jamaica's tropical climate.
- People: Master Blender Dr Joy Spence chooses and blends the aged rums.
Why it tastes like this: Pot still rum gives Jamaica its heavy, fruity character, and column rum lightens the blend. Rum ages fast in tropical heat, so every extra year in the Nassau Valley adds more oak, dried fruit and spice.
