Make it a rum cocktail
The syrups and bitters we use behind the bar. Add one to your order.
Bold Barbados rum finished in heavily charred bourbon barrels. A favourite with bourbon drinkers.
We stock Black Barrel because it's the bridge between rum and whiskey. More pot still and a charred-barrel finish give it spice and smoke. Great neat, even better in an Old Fashioned. If you drink Jack Daniel's or bourbon, start here.
Tastes like: toasted oak, vanilla, ginger, black pepper and baking spice.
How to drink it:
- Old Fashioned: 50ml Black Barrel, a teaspoon of sugar syrup and two dashes of Angostura bitters, stirred over ice with a twist of orange
- On the rocks: 50ml Black Barrel over one large ice cube with a twist of orange peel
- With ginger ale: 50ml Black Barrel over ice, topped with ginger ale and a slice of orange

For the rum nerds
- Made by: Mount Gay, at the northern tip of Barbados in the parish of St Lucy, where the deep well on the estate was first dug in 1703.
- Made from: Barbadian and Caribbean sugar cane, refined into molasses.
- Water: Drawn from coral caverns hundreds of feet underground, filtered by the island itself.
- Fermentation: For the column still rum, a closed fermentation with Mount Gay's own heirloom yeast. For the pot still rum, an open-air fermentation, where breezes carry in wild yeasts.
- Still: A traditional column still and a double retort copper pot still.
- Ageing: Matured in ex-American whiskey casks, then finished for six months in deeply charred bourbon casks, which give it its name.
Why it tastes like this: The double retort pot still gives the heavier, fruitier rum, and the column still gives the lighter one. Blending the two, then ageing in ex-whiskey casks, is what gives Barbados rum its balance of fruit, banana and vanilla. The charred bourbon finish adds the extra spice and smoke.
