Make it a rum cocktail

Barbados' classic golden rum. Light, fruity and perfect in a rum punch.
We stock Eclipse because it's the everyday rum of Barbados and a brilliant mixer. It's smooth and fruity with a little oak, so it works in anything from a punch to a rum and ginger. If you've had a rum punch in Barbados, there's a good chance it was made with this.
Tastes like: banana, apricot, vanilla and light toasted oak.
How to drink it:
- Bajan rum punch: 50ml Eclipse, 25ml lime juice, 50ml sugar syrup, a dash of Angostura and grated nutmeg, over ice
- With ginger ale: 50ml Mount Gay Eclipse over ice, topped with ginger ale and a slice of orange
- With cola: 50ml Mount Gay Eclipse over ice, topped with cola and a squeeze of lime

For the rum nerds
- Made by: Mount Gay, at the northern tip of Barbados in the parish of St Lucy, where the deep well on the estate was first dug in 1703.
- Made from: Barbadian and Caribbean sugar cane, refined into molasses.
- Water: Drawn from coral caverns hundreds of feet underground, filtered by the island itself.
- Fermentation: For the column still rum, a closed fermentation with Mount Gay's own heirloom yeast. For the pot still rum, an open-air fermentation, where breezes carry in wild yeasts.
- Still: A traditional column still and a double retort copper pot still.
- Ageing: Charred ex-American whiskey casks.
Why it tastes like this: The double retort pot still gives the heavier, fruitier rum, and the column still gives the lighter one. Blending the two, then ageing in ex-whiskey casks, is what gives Barbados rum its balance of fruit, banana and vanilla.
