Make it a rum cocktail
The syrups and bitters we use behind the bar. Add one to your order.
The top of the El Dorado range. A 21-year-old Demerara rum for special occasions.
We stock the 21 because it's one of the great aged rums, and far better value than whiskies of the same age. Dark, deep and long. A proper celebration bottle. It's a real treat for anyone who loves aged spirits, and it makes a memorable gift.
Tastes like: espresso, dark chocolate, prune, tobacco and old oak.
How to drink it:
- Neat: pour 35ml of El Dorado 21 into a tumbler, let it sit for a minute, then add a drop of water if you like
- With a few drops of water
- After dinner, with dark chocolate, a good dessert or a cigar

For the rum nerds
- Made by: Demerara Distillers Ltd, Plantation Diamond, East Bank Demerara, Guyana.
- Made from: Molasses.
- Fermentation: Up to 26 hours, giving a wash of about 7% ABV.
- Still: The original wooden heritage stills are still in use, alongside newer stills.
- Age: 21 years in oak barrels, in the Demerara climate.
- The stills in this blend: The French Savalle still for its smooth finish, and the Versailles Single Wooden Pot Still for "cognac-type notes".
- Blending: A blend of rums from different stills, put together by the Master Blenders once aged.
Why it tastes like this: Wooden stills are rare anywhere in the world, and they give Guyana's rum its heavy, rich character. The older bottles lean on the pot stills, which is where the dark, earthy depth comes from.
