An elegant aged Barbados rum, finished in three types of cask. A beautiful sipper.

We stock Mount Gay XO because it shows how refined Barbados rum can be. It's dry, layered and smooth, with no sugary shortcuts. A great gift for whisky and cognac drinkers. It's also a lovely Old Fashioned rum if you want something more refined.

Tastes like: ripe banana, toasted almond, vanilla, dried fruit and oak.

How to drink it:

  • Neat: pour 35ml of Mount Gay XO into a tumbler, let it sit for a minute, then add a drop of water if you like
  • With a splash of water to open it up
  • Old Fashioned: 50ml Mount Gay XO, a teaspoon of sugar syrup and two dashes of Angostura bitters, stirred over ice with a twist of orange

For the rum nerds
  • Made by: Mount Gay, at the northern tip of Barbados in the parish of St Lucy, where the deep well on the estate was first dug in 1703.
  • Made from: Barbadian and Caribbean sugar cane, refined into molasses.
  • Water: Drawn from coral caverns hundreds of feet underground, filtered by the island itself.
  • Fermentation: For the column still rum, a closed fermentation with Mount Gay's own heirloom yeast. For the pot still rum, an open-air fermentation, where breezes carry in wild yeasts.
  • Still: A traditional column still and a double retort copper pot still.
  • Ageing: A small blend of mature rums aged between 5 and 17 years, in American whiskey, bourbon and cognac casks.

Why it tastes like this: The double retort pot still gives the heavier, fruitier rum, and the column still gives the lighter one. Blending the two, then ageing in ex-whiskey casks, is what gives Barbados rum its balance of fruit, banana and vanilla.
