What makes El Dorado different is the stills. The distillery still runs heritage wooden stills saved from Guyana's old sugar estates, including the Port Mourant double wooden pot still, which is over 250 years old, and the Enmore wooden Coffey still, which has been making rum since 1880. Each still gives its own style of rum, and the blenders mix them to build each bottle.

Which El Dorado should I buy?

• El Dorado 5 Year Old: dried tropical fruit, caramel, butterscotch and toasted coconut. The one for mixing and rum punch.
• El Dorado 8 Year Old: toffee, dried stone fruit and flambéed banana. Soft enough to sip, and El Dorado uses it in their Mai Tai.
